Add wMXN (Mexican Peso) stablecoin (#35825)

* Add wMXN (Mexican Peso) stablecoin token

wMXN is a fully collateralized stablecoin pegged 1:1 to the Mexican Peso (MXN), issued by a Ripio subsidiary. Added across Ethereum, Base, Polygon, BSC, and Gnosis chains.

* Fix X and Telegram links

- Renamed `twitter` to `x`
- Removed non-perma Telegram invite link
